Jedediah's, an intimate 40-seat restaurant, made its summer 2006 debut to rave reviews. Peter Gianotti of Newsday declared, "restless chef Tom Schaudel is at ease here, overseer of a creative kitchen that provides both an excellent meal and a sense of place." Joanne Starkey of The New York Times bestowed three stars (excellent) on the restaurant and wrote "the meals served at Jedediah’s show Mr. Schaudel [chef] at his best." Newsday’s Erica Marcus said that chef "Tom Schaudel rules the Long Island restaurant scene."

During warmer weather, Jedediah's provides an additional 30 seats are available on the patio. Appetizers range from $10 to $20 and include such offerings as a local tuna tasting (3-4 different selections), as well as handmade ricotta gnocchi with North Fork summer vegetables in basil broth. Entrees run $26 to $35 and selections include grilled striped bass with "12 hour tomatoes," black olives, basil and sherry; and Chinese lacquered (with coffee and Mandarin glaze) Jurgelewicz duck accompanied by "forbidden rice," and local green beans. Look for a local berry shortcake with mint and lemon-scented crème fraiche to punctuate the evening. Desserts are priced $8 to $12. Afternoon "High Cheese," (a wine and cheese pairing)highlights local bounty and takes place in the gazebo.

Intimate, but casual dining is offered in the subterranean wine cellar that is partially constructed from the ballast of one of Captain Hawkin's ships. The 2,500-bottle wine cellar includes a sampling from every wine producer on Long Island and Chef Schaudel’s own Reserve wines; domestic (New York and California) and international wines are also be featured. In addition, 20 wines are offered by the glass. The menu features American tapas-style fare, a burger, an assortment of salads, and "small plates." Prices range from $7 to $22.
