The George Martin Group, one of New York Long Island’s premier hospitality firms will open their sixth restaurant in March 2008. Christened George Martin, the project is being overseen by George Korten, president of the George Martin Group and Frank Greco, chef partner. Executive chef Christopher Holt of George Martin The Original in Rockville Centre, which was rated “Excellent” by The New York Times in 2007, will head the kitchen.

The restaurant, designed by Blasé Gallo, will feature a rich, dark color palette consisting of mahogany, burgundy, and tan with punches of black and white. Tailored booths and upholstered chairs complement chic lighting fixtures and a paint-glazed brick background. The Greenhouse Room, a glass-enclosed patio, serves as an additional dining room and catering space. It will incorporate graphic bistro chairs, bright international artwork and modern lighting amid striped awning panels and a sleek fireplace.

This urban American bistro will put an emphasis on prime dry-aged steaks and market-fresh seafood served in a casual, yet sophisticated atmosphere. Holt will also incorporate menu items from George Martin The Original. Appetizers, ranging from $6 to $22, include: Sesame-crusted ahi tuna; Asiago dusted zucchini fries with horseradish crème fraiche and fresh lemon; lobster and vegetable egg roll; and a seafood sampler. Entrées vary from $18 to $38 and feature: 16-ounce dry-aged prime New York steak; Saint Peter’s fish “Piccata style” in a lemon caper sauce with lobster risotto; and linguini with lobster and shrimp. Desserts, priced from $6, include: “Deconstructed” chocolate covered strawberries; and George Martin’s signature brownie sundae with vanilla Haagen Daz ice cream, chocolate sauce, whipped cream and M&M’s.
